Chocolate Butterscotch Bars - That's Just Jeni (1)

Chocolate and butterscotch go together like peanut butter & jelly, milk & cookies, and salt & caramel. I had to create a delicious, decadent, dense bar combining chocolate and butterscotch – and it turned out pretty amazing! You can half the butterscotch layer for a smaller, less intensely sweet bar. These will have you bargaining with yourself about one more bite!

What You Need:

Bottom layer:

  • 1/4 cup butter
  • 1/2 cup sugar
  • 3 tablespoons cocoa
  • 1/2 teaspoon vanilla
  • 1 large egg
  • pinch of salt
  • 1/8 teaspoon baking powder
  • 1/4 cup flour

Butterscotch layer:

  • 3/4 cup butter
  • 2 (3.5-4 oz) packages butterscotch pie & pudding mix (OR use one butterscotch + one vanilla)
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 cup butterscotch chips

Top layer:

  • 1 1/2 cups semisweet chocolate chips
  • 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla
  • Optional – top with toffee bits!

Make them:

Preheat oven to 350 degrees.

Line an 8×8 pan with tin foil and spray with baking spray lightly.

Place the butter in a small microwaveable bowl and melt.

Mix in sugar, cocoa and vanilla until well combined.

Add egg and mix well.

Add salt, baking powder, and flour and mix until just combined.

Pour into baking pan and spread evenly.

Bake for about 8 minutes, or until it’s no longer wet.

Middle layer:

In a medium saucepan, melt the butter over medium heat. Reduce too low.

Add powdered sugar, pudding mixes, and milk. Stir until combined.

Add chips and stir until combined. Remove from heat.

Pour over bottom layer and set aside.

Make the top layer:

Place semisweet chips in a medium bowl.

Bring heavy whipping cream to the beginnings of a boil.

Pour cream over chips and let sit for about 3-5 minutes.

Stir until combined fully.

Pour over the butterscotch layer.

Cool to room temperature, then put in fridge for at least 2 hours.
