I love baking cookies for Christmas and this white chocolate pudding cookie recipe is one of the best Christmas cookie recipes I’ve ever made. So easy and amazingly tasty, it’s like having a bite of pudding–in a cookie.

Which, I mean, what’s more perfect than a cookie that tastes like pudding?! A Christmas cookie that tastes like pudding, that’s what.

What you Need to Make White Chocolate Pudding Cake Cookies

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3.4 oz package vanilla instant pudding mix
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups white chocolate chips

HOW TO MAKE WHITE CHOCOLATE PUDDING CAKE COOKIES

Preheat your oven to 350.

Line your baking sheets with parchment paper.

In a large bowl mix together flour, baking soda, salt, and vanilla pudding mix. Set aside.

In your mixer cream together butter, and sugar.

Add eggs and mix together. Add your wet ingredients to the bowl of the dry ingredients.

Mix together and lastly add the white chocolate chips and snowflake cake sprinkles.

Scoop out cookie dough and roll into balls.

Roll the balls in the sugar cake sprinkles and place two inches apart on baking sheet.

Bake for about 10 minutes or until slightly golden.

Let cool and enjoy!

How Long Do Pudding Cookies Last?

If you love a good pudding mix cookie, but you’re not interested in eating all 24 immediately when they come out of the oven, I get it. That’s a lot of cookies.

So, what I like to do is seal them in an airtight container on the counter. They’ll last 3-5 days this way, which is usually plenty of time for us to find a place to “store” all the cookies in our bellies.

But if you need your cookies to last a wee bit longer, you can pop them in that same airtight container and then drop them in the fridge.

Can You Freeze Pudding Cake Cookies?

Absolutely. You’re going to seal them in the airtight container (that part is super important, so don’t be tossing your cookies into the freezer without it) and then in the freezer. Be sure to not put anything on top of the cookies, because you’ll smash them.

But, in the freezer, the cookies will last between 3-5 months. Then just take them out when you’re ready to eat them, let them thaw and nosh away!

Alternatively, you can make the dough and put that in an airtight container (I feel like a broken record) and then into the freezer. Thaw when you’re ready to bake. Viola!

Tips for Baking Pudding Cake Cookies

Oh, your pudding cookies came out flat? That’s too bad. Good news, though? I have a handful of tips to troubleshoot your flat cookies:

  • The butter got hotter than room temperature, and was melted. You have to use room temp butter. One way to make sure that it’s not melted is to not put it in the microwave. Set it out on the counter, and if you’re in a hurry, put a warm glass over it. That will get it warmed up faster, without melting it.
  • The oven might be too hot. If you didn’t set the oven to a higher temperature than the recipe called for, your oven might need to be calibrated.
  • The oven was cold. Yeah, if your oven didn’t fully preheat or never just reached the required temperature, the cookies might not have risen. So, again, if you didn’t pop your cookies in the oven too early, then you might need to calibrate it.
  • You used really old baking soda. Did you know baking soda can go “flat”? Yeah, it totally can! So, be sure your baking soda is no more than 6-months old and has been stored in an airtight container.

Instructions

  1. Preheat the oven to 350 degrees and line your baking sheets with parchment paper.
  2. In a large bowl combine flour, baking soda, salt, and the vanilla pudding mix.
  3. In a second bowl, cream butter and sugar.
  4. Add eggs and mix until well combined.
  5. Combine wet ingredients and dry ingredients and mix thoroughly.
  6. Fold in white chocolate chips and snowflake cake sprinkles.
  7. Scoop out about 1 1/2 tablespoons of cookie dough and roll into balls.
  8. Roll each of the balls in the sugar cake sprinkles then place the balls on a cookie sheet about two inches apart.
  9. Bake for 10 minutes or until the edges are slightly golden.
  10. Allow cookies to cool completely and enjoy!
