    I just tried the Cheeseburger Casserole with a few necessary changes. I only had half cheddar amount so used gruyere for the other half. Didn't have ground turkey so used ground beef... even with lean beef there was way too much fat. I didn't know if I should just use some or all of it. What amount of fat would you say is minimum for the 'rue' of flour and butter in the drippings? I gently tilted the pan after baking to ladle out the excess fat. Gross!

    I also did a boo boo in the layering. I misread the '1/2' for the first layer of sauce, read too quickly and thought was half the whole amount, then saw (too late) that was half a cup! It was a mighty scant second and third layer of sauce. It was delicious all the same.

    I want to thank you for all these wonderful recipes. I plan to buy your book as soon as possible as it looks droolingly marvellous! I just finished my first week low-carbing and am feeling sooo good. I have done this in the past and love to eat this way. Makes me wonder why I go back to eating all the starchy gooey sweet stuff. Trying carb cycling this time as it allows you to eat more carbs and still lose weight. How can you fail with that?! LOL Have a great new year!
