  • Scrub and peel potatoes.
  • Cut into even slices.
  • Cover potatoes with cold water until you are ready to fry them.
  • Drain and pat dry with paper towels.

  • Heat oil in a dutch oven or deep skillet to 350°. We love to do this outside in our outdoor kitchen using our propane burner. It’s easy to do while we are grilling.
  • Fry potatoes in small batches, not over crowding the pan about 3- 5 minutes. Fries will not be all the way cooked. Remove to a paper towel lined wire rack scooping with a slotted spoon.
  • Raise the temperature to high heat until the oil reaches 400°.

  • Fry French Fries for a second time, in batches, for 3-4 minutes or until cooked through and crispy.

  • Drain fries on paper towel lined wire rack. Season with kosher salt, sea salt or your favorite seasoning blend.

Cooking Variation:

  • If you only want to fry the potatoes once, heat oil to 375°.
  • Fry potatoes in batches for 8 – 10 minutes or until cooked through. Fries will not be as crispy, but still delicious. Season with salt.
  • Oven Fries are also delicious but not quite the same as fries cooked in hot oil. For oven fries coat the cut potatoes with vegetable oil or olive oil. Season with salt and bake at 425° in a single layer on a large baking sheet for about 15 minutes. Flip the fries about half way through.

TIPS FOR CRISPY FRENCH FRIES:

  • Use scrubbed and peeled russet potatoes for your fries.
  • For the best results, cut your potatoes into even slices using a vegetable chopper or french fry cutter.
  • The best oil for frying is peanut oil or vegetable oil.
  • Use a deep-fry thermometer to keep an eye on your oil temperature.
  • Don’t over crowd the pan, fry in batches.
  • For the crispiest french fries, you will need use the double frying method. It’s a bit of extra work but they are more like restaurant fries if you make the extra step.
  • Drain fries on a wire rack covered with paper towels.
  • Sprinkle salt over fries right when they come out of the oil.

Ingredients

  • 2 pounds russet potatoes
  • 4 cups vegetable oil
  • kosher salt or seasoning salt

Instructions

  • Cut into 1/4 inch strips.

  • Cover with cold water until ready to fry.

  • Drain potatoes and pat dry with paper towels.

  • Heat oil in a large iron skillet or dutch oven to 350°.

  • Cook fries in batches for 3- 5 minutes, just until they start to brown.

  • Remove to a paper towel lined wire rack.

  • Raise oil temperature to 400° and fry French fries in batches for 4-5 minutes until crispy and cooked through.

  • Remove to paper towel lined wire rack.

  • Season with salt and serve immediately.
