This Chicken Teriyaki Stir Fry has been one of my favorite stir fry recipes for years. I love the taste, how easy it is to make, and the fact that there's enough veggies in there to make it a complete meal.

What you need to make Chicken Teriyaki Stir Fry

Ingredient notes & substitutions

  • Chicken - I prefer chicken thigh filets, as they have more taste than chicken breasts & are usually cheaper, but you can use any bone-less cut of chicken
  • Bell pepper - any color works, I prefer red for the color & sweetness
  • Broccoli - Peel and chop the stem, and use that too
  • Teriyaki sauce - Use store bought or make your own - I recommend this . Homemade is always tastier but a store bought version works great.
  • Vegetable oil - Make sure its a neutral one, so no olive oil. I like rapeseed oil.
  • Veggies can all be switched for different veggies and even frozen veggies. Choose your favorites and test them while cooking to make sure you don't overcook them.

Can I use store bought teriyaki sauce?

Yes, store bought teriyaki sauce is perfectly fine for this Chicken Teriyaki Stir Fry.

Do I need a wok to make this?

No, you don't need a wook to make this. I actually recommend using a flat skillet or frying pan instead of a wok, as it makes heat distribution more even. The only time I recommend using a wok is if you're cooking over an open flame, like with a gas stove.

How to make it

  1. Heat half the oil in a large pan over medium-high heat. The pan should be big enough to hold all of your stir fry.
  2. Add chicken and season with salt & ginger
  3. Mix well to get the seasoning evenly spread out
  4. Fry 5 minutes, until the chicken is cooked through. Then remove the chicken from the pan and set aside for now.

  1. Place the pan back over medium-high heat and pour in the rest of the vegetable oil
  2. Add broccoli cut in pieces
  3. Add carrots cut as match sticks
  4. Add sliced bell pepper

  2. Cover, lower the heat to medium, and let cook 10 minutes, mixing once halfway
  3. Add in the chicken and teriyaki sauce
  4. Mix well, and allow a minute or so for it all to heat up. Then serve immediately - and if you like, you can garnish with some sesame seeds just before serving.

Tips & tricks

  • Make it gluten free by using gluten free soy sauce or Teriyaki sauce
  • Make your own Teriyaki sauce while the veggies are cooking. It will be done just in time to add to the stir fry.
  • If using frozen vegetables, either cook them from frozen and add a few minutes of cooking time, or thaw them first
  • Cook chicken and veggies separately to minimize the risk of over or under cooking one or the other
  • Don't cook the vegetables too long - you want them to be crisp, not soggy
  • Covering the pan helps cook all the veggies a bit quicker
  • Prep ahead by cutting the veggies and chicken the day before
  • Store leftovers in the fridge in an airtight container in the fridge for up to 4 days
  • Store leftovers in the freezer for up to 3 months - it will affect the texture of the veggies, but it will still be a great meal

Recipe FAQ

Is teriyaki sauce the same as stir fry sauce?

Stir fry sauce is a general name for different types of sauces you can use in a stir fry. Teriyaki sauce is an example of a sauce you can use for stir frys, but there are many others as well.

Can I use soy sauce instead of Teriyaki sauce?

Using just soy sauce instead of Teriyaki sauce is not a great idea, as soy sauce is much saltier and doesn't have the same sweetness as Teriyaki sauce.

If you don't have Teriyaki sauce, either make your own in 10 minutes with this 3-ingredient Teriyaki sauce recipe or use a smaller amount of soy sauce (3 Tbsp) and 2 minced garlic cloves.

Sauté the garlic for a minute before adding the veggies, and take care not to burn it. Then add the soy sauce when you would otherwise add the Teriyaki sauce.

How to make chicken teriyaki stir fry with noodles?

If making this with noodles, either serve them on the side, or add them together with the chicken and teriyaki sauce. I prefer egg noodles for this dish, but you can also use rice noodles.

How to make chicken teriyaki stir fry with rice?

To make this with rice, cook or steam white or brown rice and serve on the side.

Ingredients

  • 3 tablespoon vegetable oil divided
  • 1 lb chicken bone-less & skin-less, cut in bite-size pieces
  • ½ teaspoon salt
  • 1 teaspoon ground ginger
  • 2 red bell peppers or other color, sliced thin
  • 1 head of broccoli florets cut in bite-size pieces, stalk peeled and sliced
  • 2 carrots cut into matchsticks
  • ½ cups Teriyaki sauce homemade or store bought

  • sesame seeds (optional)

Instructions

Teriyaki sauce (optional)

  • Combine all ingredients in a saucepan and mix.

    ½ cups mirin, ¼ cups Japanese soy sauce*, 1½ tablespoon honey

  • Place over medium heat, bring to a boil and simmer for 10 minutes until reduced in volume and a bit sticky. Then remove from the heat and set aside until you're ready to add to the stir fry.

Stir fry

  • Heat half of the vegetable oil in a large frying pan over medium-high heat. Add in the chicken and season with salt and ground ginger. Mix well and cook for about 5 minutes, until the chicken is just cooked through. Remove the chicken from the pan and set aside for now.

    3 tablespoon vegetable oil, 1 lb chicken, ½ teaspoon salt, 1 teaspoon ground ginger

  • Place the pan back over medium-high heat and add in the rest of the vegetable oil. Follow with broccoli, carrots and red bell pepper. Mix well, then cover with a lid and lower the heat to medium. Cook for 10 minutes or until veggies are a bit softened but still have a bit of crisp left. Mix once halfway.

    3 tablespoon vegetable oil, 2 red bell peppers, 1 head of broccoli, 2 carrots

  • Add in the chicken and teriyaki sauce and mix well. Allow a minute or so to heat up, then sprinkle some sesame seeds on top and serve!

    Ok this was delicious! It was just like takeout but less greasy. Adding to my rotation for sure! For all those asking about veggies, frozen etc. use whatever you have. That s the point of stir fry! You can use whatever! ?? I didn t use ANY of the veggies in the recipe, but used leftover onions,green peppers and some random mixed bag of frozen veggies. I make a lot of Asian dishes and almost always double the sauce amount regardless of what the recipe says, and glad I did this time as well. The amount of sauce in the recipewouldn t have been enough for z of pasta IMO, but like I said I cook a lot and can gauge if the sauce will be sufficient. But great great recipe!!!
