» Baked Brie (2024)

Creamy, ooey, gooey baked brie is the ultimate recipe to make for entertaining! It takes less than 30 minutes to make and will instantly take any grazing board to the next level. It’s tangy, savory and sweet all in one and makes for the perfect dip with crispy bread or crackers!

When I traveled to Paris in 2018, I basically lived off baguettes, apricot jam, and brie. It is the most delicious combination of flavors possibly ever created that has you just wonder how something so simple can be so delicious at the same time. Brie has a very strong pungent taste but beautiful creamy texture that pairs so well with the tartness and sweetness of apricot jam. Of course, you can use any jam you would like with this recipe such as fig or raspberry, but apricot is definitely my fave!

How to Make It

The baked brie is super simple to make! You only need 5 to 10 minutes of prep before it goes into the oven to do its thing. Here’s what you will need:

  • Brie
  • Olive oil
  • Apricot jam
  • Walnuts
  • Red pepper flakes
  • Salt
  • Thyme
  • Lemon zest
  • Reynolds Wrap® Heavy Duty Foil

Start out by preparing a baking tray, casserole dish, or mini skillet. We are going to line it with the one essential every kitchen has, Reynolds Wrap® Heavy Duty Foil. The holidays are already busy enough, we don’t need to add more to our plate literally by creating more dishes. It makes for the easiest clean up, especially when working with melted cheese. The foil is extremely tough and durable, making it perfect for cooking these baked bries without a worry of ripping or tearing! The last thing I want to do is scrape brie off my baking dish with a sponge. Also, this year, Reynolds Wrap® is celebrating its 75th anniversary and having used it for 25 of those years, it truly is my go-to foil in the kitchen not just for me but my whole family!

The box makes it so easy to tear a piece of foil to the size of my dish and then seal the box up shut to store in my drawer. Now flatten out the foil on the tray or dish and add the round of brie. You can make one, two, or however many you would like.

Start out by making diagonal cuts along the top of the brie just through the rind but not too much deeper. Make cuts going the opposite directions too so there is a cross-cut pattern. This will help all the toppings seep in to infuse the brie with so much flavor.

First, add a drizzle of extra virgin olive oil.

Next up, add the apricot jam just to cover the top.

After that, we’ll add chopped walnuts for a crunchy element.

Then, a sprinkle of red pepper flakes because why not! It just helps to balance the flavors but doesn’t make this dish spicy at all.

Finally, add a sprig or two of thyme and a sprinkle of lemon zest and that’s it!

In the oven it goes to roast for 15 to 20 minutes or until the center of the brie is super creamy. You can do a quick little test before taking it out of the oven by gently pressing a spoon on the side or top of the brie and if it feels super soft, it’s ready to go! The coziest dish ever as the weather gets more and more cold.

You can transfer it to a nice serving plate if you want and then just roll up the foil and toss to clean up. It couldn’t be easier and now that’s one less dish to clean up which is a huge win during the holidays.

What to Serve it With

You might be wondering, what do I even serve this baked brie with! It’s not meant to be a meal but more of an appetizer or finger food.

FIRST UP, you can serve it with a bunch of other cheeses, deli meats, fresh fruit, crackers, and more to build a charcuterie board.

SECOND UP, you can toast some bread and use it to dip into the baked brie.

Variations to Try

Because this recipe is so simple, there are so many ways you can change it up to create new flavors, textures, and so much more! Here are some ideas for you to play around with:

  • Instead of apricot jam, you can use fig jam or raspberry jam.
  • Play around with the nuts and instead of using walnuts, you can use pecans, pistachios, almonds, or whatever you fancy!
  • Add some caramelized onions to the mix – so so good.
  • To impress your guests and add a crispy element, wrap the brie in puff pastry, brush with egg wash, and bake in the oven until beautifully golden.
  • If you are not a huge fan of sweet mixed with savory, although I highly recommend trying with brie, you can skip the sweet elements of honey and jam and replace it for a savory profile like garlic and herbs for example.
